The single most common failure point in restaurant online ordering is not the website or the payment — it is the gap between "order placed" and "kitchen knows about it". ESC/POS, the Language of Receipt Printers
Almost every restaurant thermal printer speaks ESC/POS — a decades-old command set originally from Epson that became the de facto standard. It is not a document format like PDF. It is a stream of bytes mixing plain text with control codes: bold on, double-height, center align, cut the paper, kick the cash drawer, print this barcode.
You do not need to write ESC/POS by hand — the platform generates it — but knowing it exists explains a lot. It is why a thermal ticket looks the way it does (58mm or 80mm wide, monospaced, sharp black on white), why a cut happens cleanly at the end, and why the same ticket template works across nearly any compliant printer. - •Best for waiter-led service, food trucks, markets, and anywhere a fixed countertop printer does not fit.
Many venues run both: an Epson TM at the kitchen pass for auto-printed kitchen tickets, and an Urovo in hand for tableside receipts and payment.
Kitchen Tickets vs Customer Receipts
These are two different documents with two different jobs, and conflating them causes real confusion on the line. A kitchen ticket is for the cook: large, scannable item names, modifiers in bold ("NO onion", "extra cheese"), the table or order number, and the time. It deliberately hides prices and totals — the kitchen does not care that the burger costs €12.
A customer receipt is the opposite: item prices, subtotals, tax, tip, the grand total, venue details, and anything legally required. It is for the guest or for the books, not for cooking. A good setup prints the kitchen ticket automatically the moment an order arrives, and the customer receipt on demand at the till or tableside.
Routing Categories to Different Printers
Once auto-printing works, the next upgrade is sending the right items to the right station. A single order can split across multiple printers: hot food to the kitchen printer, drinks to the bar printer, desserts to the pastry station. Each station only prints the lines it owns, so nobody wades through a full ticket to find their two items.
This is configured by mapping menu categories to printers — "Bar" category to the bar printer, "Mains" and "Starters" to the kitchen printer. The customer still places one order; the system fans it out behind the scenes. For multi-station kitchens this is where paper tickets start to feel limiting and a kitchen display system becomes the natural next step.
An Honest Note on Wi-Fi Reliability
Wi-Fi is the most common reason a printer "stops working". Restaurant Wi-Fi is a hostile environment — metal shelving, microwaves, fridges, and a router shared with guests all degrade the signal right where the printer lives. A printer that prints perfectly during a quiet morning can silently drop offline during the Friday rush, exactly when you cannot afford it.
Wherever you can, run a fixed kitchen printer over Ethernet instead of Wi-Fi. A cable does not contend for airtime and does not roam to a weaker access point. If wired is impossible, give the printer a dedicated 2.4GHz network separate from guest traffic, and treat a missing ticket as an incident, not a quirk. Pair auto-printing with an on-screen view of incoming orders so a dropped print is caught immediately rather than discovered when a customer calls asking where their food is.
